Oatmeal Energy Bites

Ingredients:

  • 1.5 cups oats

  • ½ cup any nut or seed butter

  • ⅓ cup honey 

  • Optional add ins: 1-2 tablespoons of: sprinkles, chocolate chips, chia seeds or dried fruit 

Directions:

  • Combine all of the ingredients in a large bowl

    • I highly recommend having your child help you make these. The ingredients are simple, the batter is “taste safe” and the recipe has margin for errors on the measurements 

  • Scoop the mixture with a cookie scoop or spoon onto a plate or, for some fun, into mini cupcake liners 

  • Place the energy balls into the fridge for at least 1 hour so they can “set” and not be too sticky to handle. 

  • Continue to store them in the fridge in an airtight container - although they may be removed for up to 4 hours if packed for school or for an outing. 

  • Enjoy as a snack, with breakfast and on the go!
