Oatmeal Energy Bites

Ingredients:
1.5 cups oats
½ cup any nut or seed butter
⅓ cup honey
Optional add ins: 1-2 tablespoons of: sprinkles, chocolate chips, chia seeds or dried fruit
Directions:

Combine all of the ingredients in a large bowl
I highly recommend having your child help you make these. The ingredients are simple, the batter is “taste safe” and the recipe has margin for errors on the measurements
Scoop the mixture with a cookie scoop or spoon onto a plate or, for some fun, into mini cupcake liners
Place the energy balls into the fridge for at least 1 hour so they can “set” and not be too sticky to handle.
Continue to store them in the fridge in an airtight container - although they may be removed for up to 4 hours if packed for school or for an outing.
Enjoy as a snack, with breakfast and on the go!
